 CHOCOLATE MOUSSE



 

Ingredients:

  • Eggs - 2
  • Dark Chocolate - 2 cups (chopped)
  • Butter - 1tbsp
  • Fresh cream- 1cup (full fat or low fat)
  • Liquid Glucose or Golden Syrup - 2 tbsp
  • Castor Sugar - 2 tbsp
  • Rum - 2 tbsp (optional)
  • A pinch of salt

 For Garnish

  • Whipped cream
  • Chocolate shavings 

 

Method:

  • Separate egg and yolks. Whisk yolks
  • In a  microwave safe bowl, mix together chocolate pieces, salt, golden syrup and rum. 
  • Microwave uncovered at 70% power for 4 to 5 minutes. Stir in between, till it melts into a smooth sauce.
  • Beat cream with castor sugar until stiff.
  • Beat Egg white until firm.Fold egg yolks into cream using a rubber spatula. Mix gently.
  • Pour chocolate into cream yolk mixture. Add 1/4 beaten egg white into chocolate mixture. Mix gently.
  • Pour chocolate mixture into egg whites mix gently and no more white lumps.
  • Pour this into a serving dish or separate cups. 
  • Garnish with whipped cream and Chocolate shavings and refrigerate for at least 4 to 5 hours before serving.
