CHOCOLATE MOUSSE
Ingredients:
- Eggs - 2
- Dark Chocolate - 2 cups (chopped)
- Butter - 1tbsp
- Fresh cream- 1cup (full fat or low fat)
- Liquid Glucose or Golden Syrup - 2 tbsp
- Castor Sugar - 2 tbsp
- Rum - 2 tbsp (optional)
- A pinch of salt
For Garnish
- Whipped cream
- Chocolate shavings
Method:
- Separate egg and yolks. Whisk yolks
- In a microwave safe bowl, mix together chocolate pieces, salt, golden syrup and rum.
- Microwave uncovered at 70% power for 4 to 5 minutes. Stir in between, till it melts into a smooth sauce.
- Beat cream with castor sugar until stiff.
- Beat Egg white until firm.Fold egg yolks into cream using a rubber spatula. Mix gently.
- Pour chocolate into cream yolk mixture. Add 1/4 beaten egg white into chocolate mixture. Mix gently.
- Pour chocolate mixture into egg whites mix gently and no more white lumps.
- Pour this into a serving dish or separate cups.
- Garnish with whipped cream and Chocolate shavings and refrigerate for at least 4 to 5 hours before serving.
