 VERMICELLI PAYASAM


Ingredients:

  • Vermicelli - 1/2 cup (broken)
  • Sago (Javvarisi)  - 2 tbsp
  • Milk - 3 cups
  • Ghee - 1/2 tbsp
  • Sugar - 1/4 cup (or) Condensed milk - 2 tbsp
  • Cardamoms - 2
  • Vanilla essence - 5 drops
  • Cashewnuts - 1/2 tbsp (broken)
  • Almonds - 1/2 tbsp (broken)
  • Pistachios - 1/4 tbsp(broken)
  • Sultanas (Raisins) - 1/4 tbsp
  • A pinch of Saffron
  • A pinch of Salt

Method:

Soak the sago (javvarisi)  for 15 to 30 minutes.

In a pan add 1 tsp of ghee and fry vermicelli for 2 to 3 minutes and add the soak sago to it. Add milk and keep stirring for until vermicelli and sago gets boiled. Now add a pinch of salt and cardamoms.

Mix the saffron with 1 tsp of milk and add it to the pan. Add sugar  and keep stirring.

Add vanilla essence and mix it well. Garnish with fried almonds, cashewnuts, pistachio and sultanas (Raisins).
