How to Make Chilled Lassi?

Ingredients:
- Thick Curd - 5 cups
- Warm milk - 1/4 cup
- Powder Sugar - 1/2 cup (or) Castor sugar
- Cardamom powder - 1/4 tsp (optional)
- Rose water - 1 tsp
- A pinch of saffron
- A pinch of salt
- Crushed ice for serving
For Garnish:
- Fresh Cream (optional)
- Almonds
Method:
In a bowl, add saffron and warm milk set aside for 5 minutes.
In a large bowl, add saffron mixture, curd, sugar, rose water, cardamom powder and salt. Whisk thoroughly until sugar dissolves and mixture begins to froth. You can thin lassi by adding milk.
Pour into glasses, add crushed ice and garnish with fresh cream and almonds.
Serve immediately.
How to Make Aam Panna?

Ingredients:
- Raw mangoes - 2 cup (peeled and diced)
- Sugar - 1/2 cup (or) Jaggery - 1/4 cup
- Rock salt - 1/4 tsp
- Rose water - 1 tsp (optional)
- Roasted cumin seed powder - 1/4 tsp
- Chaat masala powder - 1/4 tsp (optional)
- Fresh lemon juice - 1 tsp
Method:
Mix the mangoes with 1&1/2 cup water and microwave at 100% power for 5 to 8 minutes. Add sugar and lemon juice microwave at 100% power for 2 minutes.
When cool, add cumin seed powder, chaat masala powder , rock salt and rose water blend it in a blender.
Cool and fill in air tight bottles.
Mix 1/4 class of this puree with 3/4 glass of ice cold water to serve.
