 CARROT HALWA


Ingredients:

  • Grated Carrots - 3 cups
  • Ghee - 2 to 3 tbsp
  • Sugar - 5 to 6 tbsp (or) Condensed Milk - 3 to 4 tbsp
  • Milk - 2 1/2 cups (or) Water - 2 cups
  • Cardamom powder - 1/4 tsp (or) Vanilla essence - 2 to 3 drops
  • A pinch of Salt
  • A pinch of nutmeg powder 

For Garnish:

  • Pista - 1/4 tbsp (blanched and finely sliced)
  • Almonds - 1/2 tbsp (finely sliced)
  • Walnuts - 1/2 tbsp ( finely sliced) (optional)
  • Cashewnuts -  1/2 (finely sliced)

 

Method:

In a microwave safe large bowl add grated carrots, milk, and sugar cook for 3 to 5 minutes.

Then stir and microwave on medium 60% power for 30 to 40 minutes stirring several times in between until the milk dries up. Add ghee and cook for 5 minutes. Stir in between.

Cool and mix vanilla essence or cardamom powder, nutmeg powder and 2 tbsp of nuts. 

Sprinkle the remaining nuts on top. Serve hot in winter and chilled in summer.
