 PEACH PUDDING

Ingredients:

  • Fresh Peach - 1 cup (juice) 
  • Butter - 3 tbsp
  • Flour - 120 gm
  • Baking powder - 1/2 tsp
  • Cinnamon powder - 1/2 tsp
  • Egg - 1
  • Sugar - 3 to 4 tbsp
  • Milk - 5 tbsp
  • Vanilla essence - 1tsp
  • A pinch of salt 

For Garnish:

  • Icing Sugar - 1 to 2 tbsp (for dusting) 

Method: 

Preheat oven to 500°C. Grease comparable sized baking dish. Set aside 

Put the peaches into a flat baking tray with 2 tbsp of juice.

In a large bowl, whisk together the flour, egg , sugar, baking powder, salt, cinnamon and vanilla essence. stir in the milk just until combined. 

Pour this mixture over the peaches  and bake in the oven for 30 to 40 minutes.

When cool, lightly dust the top with icing sugar and serve with chilled custard.

Note:

You can use any tinned or fresh fruits like apple, pineapple etc. in place of peaches.
