 CARROT HALWA


Ingredients:

  • Grated carrots - 2 cups
  • Sugar - 2 tbsp
  • Milkmaid - 2 tbsp
  • Milk - 2 cups
  • Ghee - 1 tbsp
  • Vanilla essence  - 1/2 tsp
  • Cardamom powder - 1/4 tsp
  • Cashewnuts ,Pista and Almonds - 2 tbsp (blanched and thinly sliced)
  • Sultanas - 8 to 10 nos.
  • A pinch of salt 

Method:

In a large heavy pan add 1 tsp of ghee fry sultanas (kismis), nuts in a low flame. Keep aside.

In a same pan add carrots, milk sugar and salt and cook for 5 to 10 minutes. Stirring several times in between until the milk dries up. Add ghee and cook for 2 to 3 minutes. Stir in between.

Cool and add vanilla essence, cardamom powder and fried sultans and 1 tbsp of nuts. Mix gently.

Sprinkle the remaining nuts on top.

Serve hot in winter and chilled in summer.
