 SWEET MANGO BHATH

Ingredients:

  • Basmathi rice - 1 cup
  • Milk - 1 cup
  • Ripe, sweet mango pulp - 1 cup
  • Ghee - 1 tbsp
  • Milk maid - 1 to 2 tbsp (or) Sugar  - 1/2 cup
  • A pinch of nutmeg powder  
  • A pinch of salt
  • A pinch of saffron  dissolved in warm milk
  • A pinch of cardamom powder 

For Garnish :

  • Raisins - 1 tbsp
  • Fried cashewnuts - 1 tbsp
  • Fried almonds - 1/2  tbsp

Method:

Wash and soak rice for 5 minutes. Cook rice in thickened milk, and water. Allow it to cool completely.

Heat a heavy bottom vessel, add 1/2 tbsp of ghee and mango pulp with sugar or milk maid stir well. When sugar is completely dissolved add cooked rice and mix gently till moisture dries up.

Remove from fir add saffron milk, nutmeg powder, salt, cardamom powder mix well.

Mix rest of the melted ghee and garnish with fried cashewnuts, raisins and almonds. Serve hot.
